1/2 cup almonds (my go-to brand)
1/4 cup buckwheat groats
1/2 cup shredded coconut
1/4 cup cocoa powder
1 cup dates, pitted and soaked
Peanut butter, melted (optional)
1. Pit and soak dates in water for at least 30 minutes.
2. Add almonds, coconut, buckwheat groats, and cocoa powder to a blender or food processor and blend until a soft ground texture is reached.
2. Drain off the dates and add to blender. Pulse until dough forms.
3. Shape into donuts and drizzle melted peanut butter on top if desired!
