Vegan Cheesy Kale Chips
These cheesy vegan kale chips are a delicious crunchy snack or side for a main meal! This recipe is also featured in our raw food cleanse, Fruit. Fat. Forage. A Raw Food Guide To Detox & Weight Loss.
1 cup cashews (or hemp seeds/sunflower seeds)
1 cup red bell pepper
1/3 cup nutritional yeast
2 tablespoons of lemon juice
1/4 to 1/2 cup water to get the right consistency
2 tsp salt
2 tsp onion powder
1 tsp garlic powder
1 bunch of kale
1. Blend all ingredients except for the kale in a food processor or blender until smooth.
2. De-stem and rip kale into bite sized pieces. Coat and rub the kale with the "cheese" sauce.
3. OVEN: place on a parchment paper covered pan and bake at 275 F for about 25 minutes – flipping over half way through. DEHYDRATOR: place on the rack and set to dry at 130 F for about 10-12 hours or overnight.
