Vegan Chocolate Chip Cookies
A gluten-free and vegan chocolate chip cookie recipe you'll return to time and time again!
1 cup of oat flour (or 1 and 1/4 cups of rolled oats ground into flour)
2 teaspoons baking powder
2 tablespoons maple syrup
1 tablespoon flax meal
Pinch of salt
1 mashed banana
2 tablespoons water
1/4-1/2 cup of vegan chocolate chips (my fave brand here)
1. Preheat oven to 350 F.
2. Combine all dry ingredients in a medium sized mixing bowl.
3. Add mashed banana, water, and chocolate chips and stir well.
4. Scoop batter onto a parchment paper covered (or greased) pan into your desired number of cookies (I usually make around 14).
5. Bake for 15 minutes, remove from oven, let cool, and enjoy!
